This recipe is so nostalgic for me. My Mom used to make a variation of these when I was a kid and my brother and I loved them!
For this recipe I put my own spin on it using clean ingredient alternatives and they taste just as good as I remember
You can also freeze them and pop them in the air fryer for a quick and easy lunch or dinner meal prep!
Ingredients
2 boneless, skinless chicken breast
1/2 cup GF flour
1 tsp paprika
1 tsp granulated garlic
1/8 tsp salt
1 box corn flake cereal ( I used Natures Path Honey'D Corn Flakes)
1 cup Ranch dressing ( I used chosen foods ranch dressing. You can also use a dairy free ranch to make this recipe dairy free as well)
Directions
Preheat oven to 400 degrees and spray a baking sheet with avocado oil
Combine the gf flour, paprika, garlic and salt in a bowl and combine
In a separate bowl add the box of corn flake cereal and crush with your hands. Not too much that its a powder but enough so that it will stick to the chicken
In another bowl add in the ranch dressing
Cut chicken into strips. Add a strip to the flour mixture, then into the ranch, then coat with corn flakes and add to baking sheet. Repeat this for each strip.
Bake for 15 minutes and finish in the air fryer at 375 for 5 minutes to get a nice crunch
NOTE: you can play around with different dressings to switch up the flavour! and you can freeze these and pop them in the air fryer when your ready to eat!
