Copycat Oaxaca Bowl

I order the Oaxaca bowl at least once every two weeks, it's conveniently in my building but also my favourite meal to grab when I'm on the go


This meal prep Oaxaca bowl recipe does not disappoint ( I honestly think its even better then the OG!)


It's packed with 35 grams of protein per serving and load with a variety of colourful vegetables that make this bowl so refreshing


There are a lot of elements to this meal prep but all and all it took me approx. 1.5 hours to prep my meals for the week

Ingredients are based on 4 portions

Ingredients

  • 3 chicken breasts

  • 1 cup cherry tomatoes

  • 1/2 red onion

  • 1 cup frozen corn

  • Refried beans ( I used Siete black beans)

  • 3-4 tbsp Siete taco seasoning (you can use any taco seasoning)

  • 1 avocado

  • 1 lime

  • 2 cups kale

  • 1 cup quinoa ( I cooked it with 2 tbsp of Organika powdered bone broth)


Beet & Carrot Slaw

Ingredients

  • 4 raw beets 

  • 3 carrots

  • 1/4 cup olive oil 

  • 1/4 cup apple cider vinegar 

  • salt & pepper to taste

Directions

  • Peel carrots & beets

  • Using the grater on a food processor or a regular grater, shave the beets and carrots

  • Add to a bowl with olive oil, ACV, salt & pepper and combine


Directions

  1. Cut chicken breasts into strips & add to a bowl with olive oil and taco seasoning

  2. Cook in a pan on medium heat for roughly 2-3 minutes a side

  3. Cook quinoa as instructed on the package (1 cup quinoa to 2 cups water) - I like adding in 2 tbsp of powdered bone broth.

  4. Add corn to a pan with avocado oil and cook on medium heat until slightly charred

  5. Cut cherry tomatoes, red onion & avocado

  6. Rip and wash kale. Once dried add 1 tsp of olive oil and a pinch of salt to the kale and massage with your hands for 1 minute

  7. Build your bowl. Add quinoa, kale, beet & carrot slaw, onions, tomatoes, charred corn, avocado, refried beans chicken and a lime wedge

  8. Top with your preferred dressing ( I used a premade cilantro lime dressing from Free Bird Market but here is a recipe for a delicious chipotle dressing you can make as well!
