This apple cake recipe hold a special place in my heart. It's from my great grandmother who got it from her neighbour back in 1912 (my mom has the original recipe with my great grandmothers hand writing).
I decided to put my own spin on it by making it gluten free and adding a yummy crumble on top while still keeping the original recipe.
If you follow me on social media you know I failed at my first attempt of trying to make this! I realized I put it in to small of a pan so it undercooked but this time we nailed it!
Ingredients
4 cups chopped and peeled apples (Empire are the best for baking)
2 cups gluten free flour (I used Bob's Red Mill 1:1)
1 cup coconut sugar
2 eggs
1/2 olive oil
3/4 cup chopped walnuts
1 tsp nutmeg
1 tbsp cinnamon
1 tbsp apple pie spice
2 tsp baking soda
2 tsp vanilla extract
The Crumble
1/2 room temp. dairy butter (you can also use ghee as well)
1 cup coconut sugar
1 cup GF flour
Directions
Preheat oven to 350 degrees
Add peeled and chopped apples, chopped walnuts, whisked eggs, coconut sugar, vanilla extract, olive oil in a bowl and combine.
In a separate bowl combine flour, spices (nutmeg, apple pie & cinnamon), and a pinch of salt
Slowly add dry ingredients to wet until combined
Line a 9x13 tray with parchment paper and add the mixture in.
Add flour and sugar in a bowl. Cut butter into chunks and combine with your hands until the mixture starts to clump together.
Add crumble evenly on-top of apple cake batter
Bake for 45 - 60 minutes
Cool for at least an hour before serving
